Grapes: 100% Chardonnay
Character: Light yellow in color with a very fine and persistent mousse. On the nose there are delicate hints of bread, yellow fruits and a certain spiciness. The taste is classic with good acidity, elegance and a long finish.
Goes well with:
Excellent as an aperitif, or with medium aged cheeses, salami and soups.
About the wine: After soft pressing, cold static decantation follows. The first alcoholic fermentation is carried out at a very low temperature in small thermo-conditioned steel vats at 14-16°C, slowly for 4 weeks to maintain the delicate aromas of the grapes. Bottle refermentation takes place for 60 days at a constant temperature of 13-14°C as well as constant light and humidity conditions. Maturation on the lees minimum 18 months. Disgorgement à la glace after a minimum of 18 months.
