Bila-Haut Occultum Lapidem Bio

Grapes: Syrah, Grenache and Carignan.

Character: Occultum Lapidem Bio is an organic, spicy and musky red wine with hints of barrels, blackberries, violets, cherries, black pepper, forest raspberries, herbs and licorice. Elegant tannin structure and long finish. 

Goes well with: Best served at 16-18°C with spicy lamb and beef dishes.

About the wine: The wine is a blend of Syrah, Grenache and Carignan from the producer's organic vineyards in the Côtes du Roussillon-Villages area, an area closely associated with calcareous gneiss and shale soils, which gives a clear terroir signature to the wine. The grapes are harvested by hand and then destemmed on arrival at the winery. This is followed by 4 weeks of skin maceration. About 50% of the wine has been stored in oak barrels and the rest in large concrete barrels.
