In 1987, Pascal Jolivet started his wine brand under the same name. Inspired by his time in Champagne and at the House of Pommery, Pascal built a state-of-the-art cellar in 1990, including temperature-controlled tanks. Contrary to the practice at the time, he wanted to work with natural yeast strains and natural processes in the winery, which is why he hired a young and hungry oenologist to make the wines, Jean Luc Soty. Until 1993, Pascal Jolivet did not own any vineyards, but when the opportunity came to buy six hectares from his cousins, he took it, and Domaine Pascal Jolivet was born. Today, they own 120 hectares in Sancerre and Pouilly Fumé, with a further 60 hectares in Touraine. The vineyards are farmed according to biodynamic principles and since 2013 they have a new winemaker, Valentina Buoso, who has been studying local yeast strains and their positive impact on the wine. It is not far-fetched to imagine that the wines of Pascal Jolivet are more refined and better than ever!
