De Nit is made in the same way as a Blanc de Blanc but with 6% Monastrell, which creates the wine's almost Provence-like color and a little extra complexity. The dosage is low, around 4-5g/L, as is always the case with Raventós wines. This allows the fruit to show its true character. Raventós wines tend to have a certain "saltiness" in the aftertaste, which is also true of De Nit. The term "salty" comes from the soil, which is a million-year-old seabed, and with the help of older vines with widespread root systems, this particular note is captured, making Raventós wines a bit more unique.
The taste is fresh with a vibrant acidity that lasts a long time, the bubbles are small and numerous. The mousse is round and creamy. The aroma is big with notes of strawberries, blood grapefruit, peach, biscuit, almonds, and nougat. The taste is fresh, with berry notes like strawberries, redcurrants, and raspberries balanced with blood grapefruit, rhubarb, and lemon. In depth, there are biscuits, almonds, and nougat that, in the aftertaste, are joined by the classic salty note. A long-lasting wine both in the mouth and for those who want to lay down a few bottles.

About Raventós i Blanc
In 1872, Joseph Ravenós Fatjo experimented with making sparkling wines in Sant Sadurní d'Anoia (Penedès), which laid the foundation for what we today strongly associate with sparkling wines and Spain, namely Cava. It is therefore not without reason that Pepe Raventós, the current owner and relative of Joseph, stands for the world's best sparkling wine from Spain. From 2012, the decision was made to leave DO Cava as they wanted a freer approach to winemaking and not be associated with what DO Cava has become today, they want to do better.
Today, Raventós i Blanc's wines are classified as "Wine of Spain" but they are made in exactly the same places as before, Sant Sadurní d'Anoia, and the focus on quality has never been higher than under Pepe Raventós' leadership. With experience dating back as far as 1497 when Raventós i Blanc was founded and 21 generations later, they have learned to work effectively in the vineyards with respect for traditional production methods and biosynergies. This means that the farm is run organically with adaptations to the vineyard, soil, climate, and vines.
